This hummus is so tasty and beautiful it'll tickle you pink! To make it, first make the garbanzo beans in your Instant Pot Electric pressure cooker. You will need:
1 pound dried garbanzo beans, about 2 cups
6 cups of water
Soak the garbanzo beans overnight or do a quick soak method. I bring the garbanzo beans to a boil using the sauté feature on my Instant Pot pressure cooker. Then I soak them for one hour, followed by cooking them at high pressure for 30 minutes, with the pressure cooker lid on sealing, and I allow them to come back to room temperature by natural pressure release. I think this makes for perfect garbanzo beans!
To prepare the hummus, use 3 cups of your garbanzo beans, including just a tiny bit of the liquid which is called aquataba.
Add to the food processor the 3 cups of garbanzo beans, the juice of one lemon, 1 tablespoon of Benson's Table Tasty, 3 cloves of garlic and one cup of roasted peeled beets that have been cut into chunks .
Process for 1 to 2 minutes until very smooth. Enjoy as a salad dressing like I do or as a tasty dip for raw veggies.
